Blueberry Banana ‘Green’ Smoothie

Hello hello!

So it’s been warming up a bit here in Cincinnati. I’ve officially switched to iced coffee. That’s always a sure sign spring is here. In celebration of this, I have my favorite smoothie recipe to share!

I love making this for breakfast on warm mornings. It’s healthy and cool and just plain tasty! I say ‘green’ only because the blueberries make it a pretty purple color.

You Need:
You need
-1 Cup Plain Greek Yogurt
-1 Cup Frozen Blueberries
-1 Whole Banana Sliced
-1 Tbs Honey
-1 Tsp Cinnamon
-2 Cup Fresh Baby Spinach

Layer the ingredients in a blender in the order I’ve listed them in. This ensures it will get blended efficiently. Blend until all the ingredients are smooth and combined. Pour into a glass and enjoy!

Pumpkin Bourbon Spice Drink

Hello everyone!

I have a new drink recipe to share with you today!

It’s definitely what I would consider a ‘winter’ drink, maybe even a holiday drink if you will… which I am aware that the holidays are over, but we can pretend, yes?

You Need:
you need copy

-1 oz Bourbon (I used my go to: Knob Creek)
-1 oz Pumpkin Syrup
(Bring 1/2 Cup water, 1/2 Cup sugar, 3 TB of pure pumpkin, 1/2 tsp Cinnamon, 1/4 tsp nutmeg to a boil. Allow to cool before using)
-1/2 oz cream (1/2 and 1/2 works as well)
– A shaker

Add all the ingredients to the shaker with some ice. Shake for about a minute (we want a foamy top!), then pour into a cocktail glass. I sprinkled mine with a bit of cinnamon for garnish.

Champagne Jell-O Shots (with rock candy topping)

Happy (almost) New Year!

I’m attending a friend’s New Years Eve party this year, and it was requested that I bring Jell-O shots (I make them a lot…). I did not, however, want to bring typical mix-some-vodka-with-a-box-of-pre-flavored-Jell-O Jell-O shots for this occasion.

I decided that champagne was the obvious flavor decision for a New Years Eve party. I did a bit of research online, and then concocted my own version!

You Need:

– 2 Cups Champagne or Sparkling Wine
– 1 Cup Whipped Cream flavored Vodka
– 1/2 Cup Lemon Lime flavored soda
– 4 Packs of Gelatin

One:

Measure out the champagne and vodka. Combine them and heat them until they are boiling. I did this in the microwave for three minutes. While they are heating, put the chilled soda in a bowl and sprinkle the gelatin packs over it. Allow it to sit for about a minute. It will foam up a bit.

Pour the hot champagne/vodka mixture into the bowl with the gelatin and soda. Stir until the gelatin is completely dissolved. Pour the mixture into a 1×1 pan and allow to cool in the fridge until firm.

While the Jell-O is cooling, break the rock candy crystals off the the sticks. Put them in a ziplock bag.

Use a hammer (or something) to crush the candy crystals.

Once the Jell-O has become firm and you are ready to serve, cut the jell-O into cubes in the pan. Use a rubber spatula to loosen each piece and transfer to your serving dish. Sprinkle each cube with the crushed rock candy right before serving. The candy melts a bit after a while, so you don’t want to let it sit out long after they’ve been decorated.

Cranberry Turkey Crescents

I wanted to make something a bit festive for the holiday season, thus these were born!

You Need:

-4oz Cream Cheese softened
-1 package of Crescents
-1/2 cup Cranberry Sauce
-Spicy Mustard
-Sliced Turkey (I used thick sliced)

One:

Combine the cranberry sauce and the cream cheese.

Two:

Unroll the crescent dough and spread about a Tablespoon of the cream cheese mixture on each piece.

Three:

Add a turkey slice and a bit of spicy mustard to each crescent roll.

Four:

Carefully roll up each crescent and place them on a baking pan. Bake them at 350 for about 20 minutes, or until they’re golden.

Five:

Remove the crescents from the oven and allow them to cool. Serve them as an appetizer or as a main dish like I did!

Savory Bagel Toppings

Here’s something you should try:

I’ve been putting avocado on my bagels for some time, but this time I decided to step it up a notch with tomato as well! Believe me when I say you really should give this a try!

You Need:

-Everything Bagel
-Cream Cheese
-Avocado
-Tomato

One:

Toast the bagel and apply cream cheese.

Slice up avocado and tomato. Top the bagel with the slices… really self explanatory. I also added a sprinkle of sea salt, which was the best idea!

Easy Baked Eggs

I’ve been making this one for a while now. It’s a great way to change up your breakfast with some fresh veggies!

You need
You Need:
-3 Eggs
-Green Pepper diced
-Onion diced
-Shredded Cheese
-Tomatoes (I used fresh ones from my parents’ garden!)
-Fresh Basil
-Salt & Pepper to taste

One:

Crack the eggs into a greased, oven-friendly baking dish.

Sprinkle the salt and pepper, peppers, onion, basil, and cheese over the eggs.

Bake in an oven heated to 450 degrees until the eggs are set (about 20 minutes). I can tell when they’re done by gently shaking the dish. If the eggs don’t jiggle they’re done!

Cut up your tomatoes while the eggs are cooling, then turn the eggs out onto a plate. Top with the fresh tomatoes and enjoy!

I especially love this breakfast because it’s easy to change it up depending on what veggies you like or have on hand! I add diced avocados to the mix quiet often! Happy cooking!

Sriracha Mustard Brussel Sprouts

Sriracha Mustard Sprouts

I was first introduced to brussel sprouts in my college cooking class. I had never tried them before. This was mainly because they were one of those veggies deemed “gross” by a lot of people. Kind of like spinach (which I think is great). Well this one day in college, I was required to try them, and you know what? I LOVED them! Ever since then I’ve been making them in different variations pretty regularly. This recipe, however, is inspired by the recipe that originally caused me to fall in love with them.

You need

You Need:
-1 Cup of Fresh (or frozen) Brussel Sprouts
-1 Clove of Garlic, minced
-1 1/2 Tablespoon of Brown Mustard
-1/2 Tablespoon of Sriracha Sauce
-1/4 Teaspoon of Onion Powder (or 1 T of minced onion)
-2 Tablespoons of Butter

One:

Bring a pot of water (enough to cover all the sprouts) to a boil. Add the sprouts and cook until they are tender and bright green. Strain out the water.

Two:
Mix
While the sprouts are cooking, combine the butter, garlic, sriracha, mustard, and onion powder.

Add the (still hot) spouts to the seasoned butter mixture. Toss until all the butter is melted and the sprouts are covered. That’s it!

I seriously make these all the time! I love the combination of tangy and slightly spicy you get from the mustard and sriracha!

Spicy Sweet Potato Burgers with Onion Slaw

Hey, everyone!

Delicious recipe today! Like really, I think this may be one of my favorite recipes I’ve ever posted… and that’s saying a lot!

Spicy sweet potato burgers with onion slaw! A little spicy. A little sweet, and a bit of tang! All the good things balanced into one thing!

You Need:

-2 large sweet potatoes
-1/2 cup panko bread crumbs
-1/3 cup flour
-1 egg
-1/8 cup sriracha hot sauce
-1 tsp paprika
-1 tsp onion powder
-1/4 tsp seasoning salt
-olive oil for cooking
For the onion slaw:
-1 medium sweet onion, sliced
-About 1/2 head of nappa cabbage
-1/2 cup Sour Cream
-Salt & Pepper to taste

One:

Wash your sweet potatoes and pierce each one on all sides with a fork. Bake in the microwave for 6 minutes. Flip over the potatoes and bake for 6 more minutes. Remove them from the microwave and slice them open. Allow them to cool for a bit until they are easier to handle.

Two:

Scoop out the flesh of the potatoes into a bowl. Mash them until they are smooth. Add the egg and mix thoroughly. Add the remaining ingredients and mix. Place the mixture in the fridge for about a half hour. I found this made forming the patties so much easier!

Three:
While the mixture is cooling, prepare the onion slaw. Slice the onion and cabbage so they are roughly the same sized slices. Heat some olive oil in a pan and add the onion. Saute it for a minute or two before adding the cabbage. Cook until the veggies are tender, adding salt and pepper to taste. Remove to a bowl and mix in the sour cream. Set aside until the burgers are done.

Four:

Use about 1/4 cup of the mixture to form balls. This mixture is kind of sloppy, so I decided this was much easier than making patties.

Heat some olive oil in a frying pan. Place one of the balls into the heated oil. Allow it to fry for a few seconds before using a spatula to smash it down into a patty about 1/4″ thick. This method really helped the patties hold their form. Cook the patty on one side for two or three minutes, then gently flip it over and cook the other side. Remove to a plate covered with a paper towel to drain off excess oil. Add more olive oil to the skillet before you repeat with each of the mixture balls.

Six:

Assemble each burger by placing a patty on a bun followed by some sliced avocado. Top with a generous portion of onion slaw.sp_done

Ginger Long Island

The long island is definitely one of my favorite drinks. It’s baffling to think that so many things together can create such an unexpected flavor. My inspiration for this drink was ginger tea… which I love, so I decided to spice up the classic long island recipe!

You Need:
you need
-1oz Vodka
-1oz Gin
-1oz Tequila
-1oz White Rum
-1oz Triple Sec
-1oz Ginger Simple Syrup
(combine 1cup of water with 1 cup of sugar and 1 cup of sliced, fresh ginger. Bring to a boil, then turn down to a simmer for about 5 minutes. Allow the mixture to cool before straining into a container.)
-Juice from half a lemon
-Coke to fill

One:

Fill a tall glass with ice.

Add 1oz of each liquor to the glass.

Add the 1oz of ginger syrup, juice from half a lemon, and top with Coke. Stir with a bar spoon or a straw. Garnish with a lemon twist and a wedge!

I love the simple twist this variation adds to a classic drink. Plus it’s perfect for summer!

Avocado Egg Breakfast

I’m always on the lookout for quick and easy, yet delicious meals I can make for myself. This is definitely one of those! Plus avocado is the bomb. Am I right?

You Need:

-1 avocado
-2 Eggs
-Green pepper, diced(maybe 1/8c ish)
-Onion, diced (about the same as the pepper)
-Parmesan Cheese
-Salt and pepper

One:

Cut your avocado in half, remove the seed, and scoop out a bit of the flesh. Just enough for the egg to fit!

Two:

Crack an egg into each half of the avocado. Sprinkle with your desired amount of salt and pepper. My egg overflowed a bit!

Top with a bit of diced green pepper, onion, and cheese!
Now it’s time to place them in a preheated oven (on a greased pan!) at 450 degrees. Bake for about 20 minutes or until the egg is set. I tested this by kind of jiggling the pan. If the egg doesn’t move, they’re done!
