Savory Bagel Toppings

Hey there.

Here’s something you should try:

I’ve been putting avocado on my bagels for some time, but this time I decided to step it up a notch with tomato as well! Believe me when I say you really should give this a try!

You Need:

-Everything Bagel
-Cream Cheese
-Avocado
-Tomato

One:

Toast the bagel and apply cream cheese.

Slice up avocado and tomato. Top the bagel with the slices… really self explanatory. I also added a sprinkle of sea salt, which was the best idea!

Spicy Sweet Potato Burgers with Onion Slaw

Hey, everyone!

Delicious recipe today! Like really, I think this may be one of my favorite recipes I’ve ever posted… and that’s saying a lot!

Spicy sweet potato burgers with onion slaw! A little spicy. A little sweet, and a bit of tang! All the good things balanced into one thing!

You Need:

-2 large sweet potatoes
-1/2 cup panko bread crumbs
-1/3 cup flour
-1 egg
-1/8 cup sriracha hot sauce
-1 tsp paprika
-1 tsp onion powder
-1/4 tsp seasoning salt
-olive oil for cooking
For the onion slaw:
-1 medium sweet onion, sliced
-About 1/2 head of nappa cabbage
-1/2 cup Sour Cream
-Salt & Pepper to taste

One:

Wash your sweet potatoes and pierce each one on all sides with a fork. Bake in the microwave for 6 minutes. Flip over the potatoes and bake for 6 more minutes. Remove them from the microwave and slice them open. Allow them to cool for a bit until they are easier to handle.

Two:

Scoop out the flesh of the potatoes into a bowl. Mash them until they are smooth. Add the egg and mix thoroughly. Add the remaining ingredients and mix. Place the mixture in the fridge for about a half hour. I found this made forming the patties so much easier!

Three:
While the mixture is cooling, prepare the onion slaw. Slice the onion and cabbage so they are roughly the same sized slices. Heat some olive oil in a pan and add the onion. Saute it for a minute or two before adding the cabbage. Cook until the veggies are tender, adding salt and pepper to taste. Remove to a bowl and mix in the sour cream. Set aside until the burgers are done.

Four:

Use about 1/4 cup of the mixture to form balls. This mixture is kind of sloppy, so I decided this was much easier than making patties.

Five:

Heat some olive oil in a frying pan. Place one of the balls into the heated oil. Allow it to fry for a few seconds before using a spatula to smash it down into a patty about 1/4″ thick. This method really helped the patties hold their form. Cook the patty on one side for two or three minutes, then gently flip it over and cook the other side. Remove to a plate covered with a paper towel to drain off excess oil. Add more olive oil to the skillet before you repeat with each of the mixture balls.

Six:

Assemble each burger by placing a patty on a bun followed by some sliced avocado. Top with a generous portion of onion slaw.sp_done

Avocado Egg Breakfast

I’m always on the lookout for quick and easy, yet delicious meals I can make for myself. This is definitely one of those! Plus avocado is the bomb. Am I right?

You Need:

-1 avocado
-2 Eggs
-Green pepper, diced(maybe 1/8c ish)
-Onion, diced (about the same as the pepper)
-Parmesan Cheese
-Salt and pepper

One:

Cut your avocado in half, remove the seed, and scoop out a bit of the flesh. Just enough for the egg to fit!

Two:

Crack an egg into each half of the avocado. Sprinkle with your desired amount of salt and pepper. My egg overflowed a bit!

Three:

Top with a bit of diced green pepper, onion, and cheese!
Now it’s time to place them in a preheated oven (on a greased pan!) at 450 degrees. Bake for about 20 minutes or until the egg is set. I tested this by kind of jiggling the pan. If the egg doesn’t move, they’re done!

Avocado Fries

Avocado Fries
I don’t know about you… but I’m a bit obsessed with avocados… like for real. They’re just so tasty AND healthy! Best of both worlds? I think so.

Avocado Fries
You need

One:
combine
Combine the bread crumbs, seasoning, and cheese in a bowl. In a separate bowl, whisk the egg and water. Set the two bowls up next to each other.

Two:
slice avocados
This step is pretty self explanatory… slice up your avocados! Don’t worry if they’re not perfect!

Three:
Dip
Coat
Now comes the time to bread our avocado slices. Use a fork to dip each slice in the egg mixture followed by the breadcrumb mixture. Make sure every slice is coated well!

Four:
bake
Spray a baking sheet with olive oil (or normal cooking oil) and place all the ‘fries’ on it. Now spay the fries as well. At this point I also added a bit of sea salt and pepper. Once they’re all seasoned up, bake at 450 for about 10 minutes. The bread crumbs will have browned a bit.

Enjoy your avocado fries on their own or with some ranch for dipping! I feel they would go well along with a tasty burger!

Tangy Avocado Dressing

Hello hello!

I have another recipe to share! This one is a great one! It’s kind of a combination of guacamole and salad dressing. I love guacamole. I love salad. I’m in love with this.

First:
vegetables
Chop all the vegetables into more manageable sizes. The easiest way to cube an avocado is to first slice it in half and remove the pit. Then you can use a small knife to cut a checkered pattern but without breaking the skin. All you need to do after that is scoop it out with a spoon. Easy.

Second:
blend
Toss all of your ingredients into a blender or food processor. I’m not lucky enough to have a food processor so I used a blender. Simply blend the ingredients until its smooth. That’s it!

salad
I like to eat it on a nice spinach salad with a bit of kale and sunflower seeds. Tasty. :]

Avocado Popsicles

Hello all!

I know its been some time… you see, I recently had to move back home with my parents (something I’ve been completely dreading for awhile now) so I can job hunt and save up a bit. The problem though is that their internet is absolutely horrid… It takes so long to do anything on it I’ve not felt like dealing with a blog post. Today I finally have something I feel would be irresponsible of me not to share with everyone…

Avocado Popsicles

I had my first experience with these tasty things last summer from a lovely company called Streetpops. They have the most fantastic Popsicles in the most interesting flavors. Anyways, I tasted their avocado one and fell in love. It didn’t occur to me to try and recreate it on my own until almost a year later!

Of course my pops aren’t the same. Probably not at all. But they are creamy and delicious. I will guarantee you that!

You will need:
-One ripe avocado
-3/4cup of yogurt (I used Yoplait Vanilla but if you like them less sweet I would use original flavor)
-1tbs of simple syrup*
-A pinch of salt

*Simple syrup:
Combine equal parts water and sugar and bring to a boil on the stove top. Cool and store in a sealed container in the fridge.

Process:
Combine all ingredients in a blender until smooth and there are no longer and avocado lumps. Pour into Popsicle molds and freeze!

This recipe is so simple and delicious.
